How to Brew Perfect Coffee with a V60
What is V60?
The V60 is Hario's iconic pour-over brewer from Japan. It takes its name from the 60-degree cone angle. Spiral ridges on the inner wall ensure even water flow and deliver all of the coffee's aromatic compounds to your cup.
V60 is the most popular brewing method in specialty coffee. The reason is simple: control. Water temperature, pour rate, grind size — you have complete command over every variable. This means consistent, high-quality results in every cup.
What You Need
- Hario V60 dripper
- V60 filter paper
- Kettle (preferably gooseneck)
- Scale (0.1g precision)
- Timer
- Freshly ground coffee (medium-fine setting)
Step-by-Step V60 Brewing
1. Rinse the Filter
Place the filter in the V60 and rinse with hot water. This removes paper taste and preheats the dripper. Discard the rinse water.
2. Prepare the Coffee
Grind 15g of coffee to medium-fine (sand-grain consistency). Place the ground coffee in the filter and level gently.
3. Bloom (Pre-wet) — 0:00-0:45
Pour 30ml of water (92-94°C) over the grounds in circular motions. Ensure all grounds are saturated. Wait 30-45 seconds. CO₂ release during this phase causes the coffee to expand — this blooming is a sign of freshness.
4. First Pour — 0:45-1:15
Add 90ml water (total 120ml). Pour in slow, steady circles starting from the center. Avoid pouring directly onto the filter walls — ensure even passage through the coffee bed.
5. Second Pour — 1:15-1:45
Add 80ml water (total 200ml). Continue the same circular technique. Maintain a steady pour rate.
6. Final Pour — 1:45-2:15
Add the last 50ml water (total 250ml). Pour gently and with control.
7. Wait and Serve — 2:30-3:00
When all water has drained (around 2:30-3:00), brewing is complete. Swirl the cup gently and taste.
Critical Variables
- Water temperature: 92-94°C is ideal. Boiling water burns the coffee; too cool means under-extraction.
- Grind size: Medium-fine. Too fine = bitter, over-extracted. Too coarse = watery, weak.
- Ratio: 1:16.7 (15g:250ml). For stronger, try 1:15; for lighter, 1:17.
- Pour speed: Slow and controlled. Aggressive pouring creates channeling.

V60 performs best with light roasts and single origin coffees. Ethiopian coffees reveal their floral and fruity notes beautifully in a V60. Colombian coffee offers a balanced cup with caramel sweetness.
