From the San Ignacio and Jaen districts of Cajamarca, this washed coffee is produced by 600 farmers of the APROCASSI cooperative. Cherry, apple, and sugarcane notes shine through. Beans of Typica, Bourbon, and Caturra varieties grown at 1,200-1,900m altitude offer dark chocolate, peanut butter, and a clean finish.
