Why Does Coffee Go Stale?
Coffee battles 4 enemies after roasting:
Oxygen — The biggest enemy. Oxidizes oils, causes aroma loss.
Moisture — Coffee is hygroscopic, absorbs moisture. Quality drops.
Light — UV rays break down aroma molecules.
Heat — High temperatures melt oils, accelerate staling.
Protect against these 4, and your coffee stays fresh for months.
5 Golden Rules
Rule 1: Use an Airtight Container
Wrong: Open bag, plastic bag, regular jar Right: Vacuum/airtight jar or original valved package
After roasting, coffee releases CO2. Good packages have a one-way valve — CO2 escapes, oxygen cannot enter. After opening, transfer to an airtight container.
Our recommendation: Camera dispenser, Airscape, Friis vault — vacuum jars. Or a glass jar with a sealing gasket.
Rule 2: Refrigerator is WRONG
The most common mistake is putting coffee in the fridge. 3 reasons why:
Moisture condensation — When you take cold coffee out, moisture forms on the surface
Absorbs odors — Onion, cheese, leftover food smells transfer to coffee
Temperature fluctuation — Every door opening affects the beans
Exception: Large quantities you won't use for months can go in the freezer (whole beans only). But for daily use, NEVER the fridge.
Rule 3: Store in a Dark, Cool Place
Ideal storage conditions: - Temperature: 18-22°C (room temperature) - Light: Dark cabinet or opaque container - Humidity: Low (don't keep it next to the sink)
A clear glass jar looks nice, but UV exposure causes aroma loss. Don't keep coffee near windows.
Rule 4: Store as Whole Beans, Grind at Brew Time
Pre-ground coffee loses 60% of its aroma in 15 minutes. Whole beans take 4 weeks for the same loss curve.
Invest: A hand grinder costs $30-100. A burr grinder costs $100-500. This investment determines 40% of your coffee quality.
Rule 5: Don't Buy Too Much
When specialty coffee is at its peak: - 7-30 days post-roast — peak aroma window - 30+ days — main aromas still good - 60+ days — noticeable decline begins - 90+ days — stale taste
Strategy: Buy 250g packs and finish in 2-3 weeks. A 1kg pack makes sense if 2+ people drink coffee.

Special Rules for Pre-Ground Coffee
If you must buy pre-ground: - Transfer to airtight container IMMEDIATELY - Finish within 1 week - Refrigerator is still WRONG - If possible, buy grind specific to your brewing method (V60, espresso, etc.)
Coffee Freezer Storage: Detailed Guide
You can freeze whole bean coffee, but it must be done right:
Vacuum-seal: Vacuum bag or glass jar required
Portion small: 50-100g portions (don't open and close repeatedly)
Don't open immediately: After taking out, let warm to room temperature for 30 min (prevents moisture condensation)
Don't refreeze: A package taken out should not be refrozen
FAQ
Glass jar or steel? Both work, but glass lets light through. Steel (matte) is best. Store transparent glass in a dark cabinet.
Why not the original opened bag? A vacuum-sealed, valved, sealed original package is best while sealed. After opening, it's good for 1-2 weeks. Then transfer to a jar.
How can I refresh stale coffee? Stale coffee doesn't come back. You can mask it slightly with dark roast espresso. Best practice: drink specialty coffee fresh.
What about plastic containers? Plastic can leach flavors and isn't fully airtight. Glass or stainless steel are far better choices.
Should I store green (unroasted) coffee differently? Yes — green coffee is more stable, can last 6-12 months in a cool dark place. Roasted coffee is the fragile state.
