V60 uses a thin paper filter and produces a bright, clear cup. Chemex uses a much thicker filter, which results in an even cleaner but lighter-bodied cup. V60 is ideal for single servings, while Chemex can brew 3-6 cups at once.
Use a medium-fine grind for V60, somewhere between table salt and sea salt. Too fine a grind slows the water flow and creates bitterness. Too coarse a grind lets water pass through too quickly, resulting in a watery, under-extracted cup.
